HOW WE MAKE OUR HANDCRAFTED MEAD

We use traditional methods to create our exceptional mead in small batches. What does this really mean? It means we keep things simple – like it used to be.

We take natural raw honey from a single supplier and we add water, a bit of yeast and that’s it. Sometimes we add barley or fruit but we’ll tell you about it on the label.

Working in small batches preserves the character of honey in every brew and helps us maintain high quality throughout.

We are passionate about our mead, and have been way before we started DK Mead. We can’t wait for you to try it.

QUALITY RAW INGREDIENTS

We only use raw honey which has been through a coarse filter to separate out bits of bees wax and pollen. Direct from the beehive and into our mead.

SUPPORTING INDEPENDENT SUPPLIERS

We prefer to work with small, independent and local providers that use sustainable methods.

NO SWEETENERS or PRESERVATIVES

We don’t add sulphites or other preservatives. No additives to extend shelf life, or sweeteners.
 

EXCEPTIONAL TASTE OF NATURE

We gently pasteurise our mead in bottle to lock in the freshness, leaving all the natural goodness of honey for you to enjoy.

Boozy Bees is an exceptional taste of nature – A sweet and sparkling mead made from raw, unprocessed honey. All we add is water and yeast. Simple AF.

Dark Side of the Hive - 5.5% ABV

A full-bodied reincarnation of Porter made with raw, unprocessed honey. Biscuity malt flavours, a hint of coffee and smokin liquorice balanced with a dark and complex honey.

Origin Story

Now you may think honey is honey, like all other honey. So did I until about 2017.

On a trip to Russia in the height of summer – where it gets very warm – I had the bright idea to treat our hosts to a BBQ. I was in front of the grill on a hot day and it was a scorcher in more ways than one!

My wife then brought me a bottle of cold, sparkling mead bought at the farmer’s market stall selling honey.  When I took my first sip – it changed my life.

That was a very traditional Russian mead recipe and very different to all mead I’ve tried before in the UK. The key to this recipe? Simple – natural raw honey, water and yeast – no fancy brewing additives, chemicals or cheap tricks.

I began to experiment at home for myself. Working together with Kirill and Svetlana, we started a small meadery using the same traditional recipe and principles, without compromise.
